Mushroom Pie

Ingredients (Dough):

– 800g flour

– 30g yeast

– 400ml lukewarm milk

– 2 eggs

– 100ml oil

– A pinch of salt

 

Filling Ingredients:

– 1.2kg mushrooms

– 3-4 eggs

– 2-3 finely chopped onions

– 2-3 tablespoons oil

– Salt

– Pepper

– 1 egg and a little milk for brushing

 

Preparation:

  1. Mix the flour with yeast dissolved in a little milk, eggs beaten in lukewarm milk, and salt.
  2. Gradually add the oil and knead the dough until it becomes slightly elastic. Cover it and let it rise.
  3. Clean the mushrooms and chop them finely with a knife. Sauté them lightly in oil in a tall skillet. Once they release their water, add the chopped onions and cook together. Remove from heat and let it cool.
  4. Once cooled, mix the mushrooms with beaten eggs, salt, and freshly ground black pepper. If the mixture is too liquid, you can add 1-2 tablespoons of semolina or breadcrumbs.
  5. Divide the risen dough into two equal parts. Roll them out with a rolling pin on a board. Place one sheet in an oiled pan, spread the mushroom filling, and then place the other sheet on top. Brush the top sheet with beaten egg and prick it with a fork in several places.
  6. Bake the mushroom pie in a preheated oven for about 50 minutes.
  7. Let it cool before cutting.
