Ingredients (Dough):
– 800g flour
– 30g yeast
– 400ml lukewarm milk
– 2 eggs
– 100ml oil
– A pinch of salt
Filling Ingredients:
– 1.2kg mushrooms
– 3-4 eggs
– 2-3 finely chopped onions
– 2-3 tablespoons oil
– Salt
– Pepper
– 1 egg and a little milk for brushing
Preparation:
- Mix the flour with yeast dissolved in a little milk, eggs beaten in lukewarm milk, and salt.
- Gradually add the oil and knead the dough until it becomes slightly elastic. Cover it and let it rise.
- Clean the mushrooms and chop them finely with a knife. Sauté them lightly in oil in a tall skillet. Once they release their water, add the chopped onions and cook together. Remove from heat and let it cool.
- Once cooled, mix the mushrooms with beaten eggs, salt, and freshly ground black pepper. If the mixture is too liquid, you can add 1-2 tablespoons of semolina or breadcrumbs.
- Divide the risen dough into two equal parts. Roll them out with a rolling pin on a board. Place one sheet in an oiled pan, spread the mushroom filling, and then place the other sheet on top. Brush the top sheet with beaten egg and prick it with a fork in several places.
- Bake the mushroom pie in a preheated oven for about 50 minutes.
- Let it cool before cutting.
