Fish Saramură from the Prut River
Ingredients:
1 kg of fish
1 bell pepper
1 sweet pepper
1 hot pepper
4-5 tomatoes
2-3 bay leaves
1 sprig of thyme
1 head of garlic
1 bunch of fresh parsley or dill
Salt
Pepper
Preparation:
Clean the fish thoroughly, scale it, gut it, wash it, and season it with salt. Then grill it over high heat. Also, place the tomatoes on the grill to roast.
For the brine, boil water with a pinch of salt, bay leaves, finely chopped hot pepper, peeled and chopped tomatoes, chopped vegetables, thyme, pepper, and finely chopped garlic. After all the ingredients have boiled for a few minutes, add the fish directly from the grill, add the chopped parsley or dill (according to your preference), and let it simmer in the brine, after the heat has been turned off, for a few minutes to blend the flavors.
