Ingredients for Walnut Swirl Pastry:

– 1kg flour

– Yeast the size of a walnut

– 700 ml lukewarm water

– A pinch of salt

– 6-7 tablespoons of oil for the dough

– For the filling: 500g ground walnuts, 250g sugar, and some essences (vanilla, rum)

 

Walnut Swirl Pastry Preparation:

  1. Begin by making a simple dough, which you’ll let rise for about an hour, then divide it into 4 pieces and roll them out very thinly.
  2. Sprinkle the filling on each sheet, and then… roll them up.
  3. Brush the swirl pastries with beaten egg, then place them in a preheated oven for 35-40 minutes.
  4. It can be served warm or cold, sliced or torn, but definitely with some cold, cold rosé.
