Pumpkin Pie and Cheese Pie
Ingredients for the dough:
• 1 kg of wheat flour
• 2 eggs
• 1 cup of water (approx. 250-300 ml)
• 1 teaspoon of dry yeast
• 5 g of salt
• 50 ml of oil
• Vanilla sugar
Ingredients for the cheese filling:
• 600 g of cottage cheese
• 3 eggs
• 100 g of raisins
• 1 packet of vanilla sugar
• 1 small bottle of vanilla essence
Ingredients for the pumpkin filling:
• 1 kg of grated pumpkin
• 250 g of granulated sugar
• 50 ml of oil
• 1 teaspoon of cinnamon
Preparation:
Dough:
In a cup of water, add the yeast and a teaspoon of vanilla sugar, mix well, and let it sit for a few minutes until all the ingredients dissolve.
In a large bowl, place the flour (sifted beforehand if using homemade flour), salt, eggs, oil, and the yeast mixture prepared as described above.
Knead the dough until it becomes very well mixed and homogeneous. Remove it from the bowl and knead it for a few more minutes, then place it back in the bowl, cover it with plastic wrap, and let it rise for one hour.
Meanwhile, prepare the fillings.
For the cheese filling, mix the cottage cheese with the eggs, raisins, vanilla sugar, vanilla essence, and mix until well combined.
For the pumpkin filling, grate the pumpkin and place it in a pan with oil. Cook it until it softens, then add the granulated sugar. When it’s done and the heat is turned off, add the cinnamon and let it cool.
After the dough has risen, prepare the pastry sheets to be filled.
Take a handful of dough, roll it out very thinly with a rolling pin, and roll it between your hands (pulling gently on the edges without tearing) to obtain a very thin sheet.
Next, brush the pastry sheet with oil, spread the filling, roll it up, and place it in a baking tray lined with parchment paper. Before rolling, you can sprinkle a bit of granulated sugar on it, according to your taste.
Before placing the pies in the oven, brush them on top with beaten egg and sprinkle with vanilla sugar. Bake them for about 40 minutes at 180 degrees Celsius. Remove from the oven when they are done and sprinkle with powdered sugar.
