Jarkovia just like in Brătești

Jarkovia Ingredients:

– 1.5 kg pork

– 2 kg yellow onions

– 1 kg pickled cucumbers (in brine)

– Two tablespoons of tomato paste

– Cooking oil

– Salt

– Pepper

– Bay leaves

 

Instructions:

  1. Sauté finely sliced onions in a cauldron with a few fingers of oil.
  2. Sear generous pieces of pork over high heat.
  3. Slice the pickled cucumbers into suitable rounds and soak them in cold water for desalting.
  4. In the pot used for Jarkovia, alternate layers of onions, meat, and pickles, with a pinch of salt, pepper, and bay leaves between them.
  5. The final layer should be sautéed onions. On top of everything, pour a few tablespoons of tomato paste dissolved in lukewarm water.
  6. Let it simmer with the lid on over low heat for approximately an hour while preparing the polenta.
  7. Serve Jarkovia with polenta. Enjoy!
