Jarkovia Ingredients:
– 1.5 kg pork
– 2 kg yellow onions
– 1 kg pickled cucumbers (in brine)
– Two tablespoons of tomato paste
– Cooking oil
– Salt
– Pepper
– Bay leaves
Instructions:
- Sauté finely sliced onions in a cauldron with a few fingers of oil.
- Sear generous pieces of pork over high heat.
- Slice the pickled cucumbers into suitable rounds and soak them in cold water for desalting.
- In the pot used for Jarkovia, alternate layers of onions, meat, and pickles, with a pinch of salt, pepper, and bay leaves between them.
- The final layer should be sautéed onions. On top of everything, pour a few tablespoons of tomato paste dissolved in lukewarm water.
- Let it simmer with the lid on over low heat for approximately an hour while preparing the polenta.
- Serve Jarkovia with polenta. Enjoy!
