Chicken Broth like in Bazga
Ingredients:
1 large homegrown chicken
onion,
1 carrot,
1 parsley root,
1 parsnip,
1 bell pepper
250-300 ml homemade sour broth
1 bunch of fresh parsley
1 bunch of thyme
salt
pepper
Preparation:
First, prepare the chicken by cutting the meat into small pieces. Wash it thoroughly with plenty of water, then place it in a large pot filled generously with cold water so that you won’t need to add more during cooking. Boil it over low heat for about one and a half to two hours, removing any foam that forms on the surface of the pot with a spoon.
Prepare the vegetables by cleaning and washing them, then chop them very finely.
After the chicken has boiled, add the chopped onion, carrot, parsley root, parsnip, and bell pepper, all finely chopped, as mentioned. Gently stir with a spoon and let it simmer for a few minutes, covering the pot with a lid. Then, add a cup of homemade sour broth and a few sprigs of thyme. After two to three boils (2-3 minutes), remove the thyme sprigs and add about two handfuls of homemade noodles, which should be boiled for about 3-4 minutes.
Finally, adjust the taste with salt and pepper. When the heat is turned off, sprinkle finely chopped fresh parsley on top and let it infuse under the lid.
