Traditional Sour Soup with Meatballs and Homemade Bagels

Ingredients for Meatball Soup:

2 carrots

1 parsley root

1 celery root of suitable size1 bell pepper

2 medium-sized onions

a bunch of lovage

 

For Meatballs:

1 kg fatty pork, minced

1 teaspoon ground black pepper

1 teaspoon sweet paprika

1 heaping teaspoon of salt

 

Preparation:

First, prepare the meatballs by mixing the minced meat with pepper, salt, and sweet paprika. Knead it by hand until the mixture is well blended. Then, shape small meatballs, about the size of a walnut, by hand. Next, boil them in a pot of hot water to which a teaspoon of salt has been added.

In the meantime, clean, wash, and dice or grate the vegetables, as is the case with the carrot.

When the meatballs are almost ready, after about 30-40 minutes of boiling, remove them from the water with a spatula. Add all the prepared vegetables and finely chopped lovage to the remaining water. Cover with a lid to simmer. After a few good boils, add a coffee pot of sour broth, salt, and pepper to taste. The pre-cooked meatballs and homemade noodles should be added next, and simmer for a few more minutes before serving.

 

Ingredients for Homemade Bagels:

2 kg wheat flour

30 g dry yeast

50 ml olive oil

2 teaspoons salt

1 teaspoon sugar

room temperature water

 

Preparation:

For the bagels, first mix the yeast and a teaspoon of vanilla sugar in a cup of water, stirring well and let it sit for a few minutes to dissolve all the ingredients.

In a large bowl, put the flour (sifted in advance if using homemade flour), salt, eggs, oil, and the yeast prepared as above.

Knead the dough until it is very well blended. Remove it to a floured countertop and knead it for a few more minutes, then place it in the floured bowl, cover it with a kitchen towel, and let it rise for an hour.

In the meantime, prepare the filling.

For the cheese pie, mix the cheese with the eggs, raisins, vanilla sugar, vanilla essence, and blend well.

For the pumpkin pie, grate the pumpkin through a grater and put it in a pan with oil until it softens well. Add the sugar, and when it’s ready and the fire is off, add the cinnamon and let it cool.

After the dough has risen, prepare the pie sheets to be filled with the filling.

Take a handful of dough, stretch it very well with a rolling pin, and roll it in your hands (pulling gently under the dough without breaking it) to make the sheets as thin as possible.

Next, grease the pie sheets with oil, spread the filling, roll them up, and place them in the tray on parchment paper. Before rolling out the pie, you can sprinkle a little granulated sugar to taste.

Before placing the pies in the oven, brush them on top with a beaten egg and sprinkle with vanilla sugar. Bake for about 40 minutes at 180 degrees Celsius. Remove from the oven when they are ready and sprinkle with powdered sugar.
